Fuul is a common dish throughout the Arabic speaking world and can be prepared in a variety of ways. Sudanese food commonly includes tomatoes, cumin, lime, ground cumin, and is usually garnished with feta cheese and sesame oil.

Fuul is a common dish throughout the Arabic speaking world and can be prepared in a variety of ways. Sudanese food commonly includes tomatoes, cumin, lime, ground cumin, and is usually garnished with feta cheese and sesame oil.

Directions

  1. Heat the oil in a medium sized pot on low to medium heat, then add the onion and fry, semi-covered and stirring occasionally, for 6 to 8 minutes until the pieces soften and begin to golden. Add the tomato and fry for 5 minutes until it softens and breaks down, then the colour changes into a deeper red.
  2. Stir in the rinsed fava beans and water. Season with the cumin, salt, and pepper. Bring to a gentle boil then lower to a medium to low heat for 5 to 10 minutes to allow the beans to cook and release their juices. Turn off the heat. 
  3. Add the juice from half a lime. Taste and balance the flavours by adding more of any of the seasonings. Serve in a deep round bowl and crumble feta cheese on top, sprinkle a dash of cumin, and finally drizzle sesame oil over the top. Serve with bread.

Optional

  • Add 1 pressed garlic clove, 1 chopped green chilli, ½ chopped green pepper, and/or ½ chopped carrot after the beans have cooked.
  • Cook 1 small, thinly sliced carrot and/or ½ chopped green pepper with the beans.
  • Use olive oil instead of sesame oil as garnish.
  • Add 2 chopped spring onions with the tomato instead of frying the onion in the pan.

Hint

  • Some canned fava bean brands are labelled ready to cook, in which case pour the beans directly into a pot without discarding the preservative.
